Manty is a traditional dish of oriental cuisine. These are close relatives of ravioli and khinkali, but they are prepared differently. Dough for manties roll very thin, and cook them almost always for a couple.
How to make dough for manti
Fresh mantel dough
- 500 g of flour;
- 1 egg;
- 1 glass of water;
- ½ teaspoon of salt.
In a bowl, pour in a little more than half a cup of warm water, add the egg and salt. Mix all the ingredients thoroughly until the salt dissolves completely.
In a separate bowl, pour in the sifted flour. Make a hole in it and pour in the prepared mixture. Gently stir everything up, gradually adding the remaining warm water.
You should get a very thick dough, which can not be turned with a spoon.
On the table spread with flour, lay out the resulting mass and start kneading it with your hands. 15-20 minutes carefully punch the dough from all sides.
Cover the dough with a towel and leave it alone for an hour.
Yeast dough for mantis
- 500 g of flour;
- 10 g of dry yeast;
- 1 tablespoon of sugar;
- ½ teaspoon of salt;
- 1 tablespoon vegetable oil;
- 1 glass of water.
Sift flour and salt. Yeast dilute in 3-4 tablespoons of water with sugar, and then add the rest of the water. Stir, gradually pouring in flour. Knead until the dough begins to fall behind. At the very end, add warm vegetable oil.
Cover the dough with a napkin, wrap it with a towel and put it in a warm place. When the dough rises, dock it and let it come back up again.
How to prepare a filling for manti
Filling with meat
- 500 g of chopped meat;
- 75 g of fat;
- 250 g of onion;
- 1 teaspoon of zira;
- salt and pepper – to taste.
A classic filling for mantas is prepared from lamb with the addition of fatty or fatty fat. But you can use beef, pork or chicken or mix different types of meat.
Do not use a meat grinder when preparing the filling. Just chop the meat with a knife.
Add the minced meat pieces. This will make the mantles more gentle. Sometimes fat is replaced with butter.
Then send the chopped onion. It is believed that the more it is, the more juicier the filling will be. Therefore, usually minced meat is mixed with onions in a proportion of 2: 1.
The main spice for manti is zira, it needs about a teaspoon. Salt, pepper and other spices add to taste. Marjoram, coriander and basil will make mincemeat especially tasty and fragrant.
- 400 g of fish fillet;
- 4 cloves of garlic;
- 2 onions;
- salt, black and red ground pepper – to taste.
You can use any fish fillets, except cod, jellyfish, macrourus, notothenia, halibut, perch and carp.
In the meat grinder, twist the fish fillet together with the onion. Salt, pepper, add garlic through the press. Stir everything.
- 400 g of pumpkin;
- 1 teaspoon of sugar;
- 2 tablespoons of vegetable oil;
- 2 onions;
- Salt and spices – to taste.
Wipe the pumpkin and cut into cubes. In vegetable oil, lightly fry the chopped onion. Connect it to the pumpkin and mix well. Salt, pepper, add sugar. To fry a pumpkin it is not necessary, it is enough to mix and hold on fire no more than 5 minutes.
Filling with potatoes
- 400 g of potatoes;
- 50 g of lard;
- 2 medium bulbs;
- salt, ground pepper – to taste.
Peel and cut into small cubes potatoes and onions. Add crushed lard and season with salt and spices.
How to mold manties
First, thinly roll the dough. Cut out a few circles from it and put in the middle of each stuffing.
Protect each circle in the center so that a longitudinal line is obtained. Opposite sides of the mug blind in four ears. From one and the other side, fasten the ears together.

How to Steam Mantas
If you do not have a mantilla, cook in a conventional steamer or multivark (Steam cooking program).
While the water boils in the bottom of the dishes, dip the bottom of the mantels in vegetable or melted butter and lay on the grate. They will be prepared for 40-50 minutes.
How to fry manti
Warm the oil in a frying pan with high sides. It should be exactly enough so that the mantles are covered in half. Lay manties, pour half a cup of water and immediately close the lid. After 15-20 minutes, water will boil away, manties will start to be roasted. Wait until they get a golden color, and turn off the stove.
