Kish (from french quiche – pie) is a dish of French cuisine, invented in Germany. Economical and ingenious German bakers did not want to throw away the remainder of the dough when cooking bread and began to use them as a basis for the pie. Everything was in the stuffing that came to hand.
Refined Frenchmen changed the ingredients, made the dough more friable, and the filling – airy.

Ingredients
For the test
- 250 g of flour;
- 150 g of butter;
- 1 chicken egg;
- a pinch of salt.
For filling
- 300 g of chicken fillet;
- 300 g of champignons;
- 1 onion;
- a pinch of salt.
To fill
- 200 ml low-fat cream;
- 2 chicken eggs;
- 100 g of cheese;
- greenery.
Preparation
First, prepare the dough. Sift the sifted flour with the salt. Frozen oil, cut into slices and add to the dry mixture.
Rub everything into a crumb. Add the egg and mix the dough.
Put the dough into the refrigerator for 30 minutes. At this time, fill the filling.
Chicken fillet wash, separate from excess fat and cut into small pieces.
Put in a saucepan, pour water and cook.
Finely chop the onions. Fry it in vegetable oil until golden brown.
Champignons washed, cut into small plates and sent to a frying pan to a bow. After 7-10 minutes add to the vegetables chicken. Mix the stuffing and turn off the fire.
Roll the dough out and put it in the baking dish. Use a fork to make holes all over the surface.
Put the baking tray with the dough into a preheated oven to 200 ° C. Bake for 10 minutes.
At this time, prepare to fill. In a deep bowl, mix the cream and egg. Whisk with a whisk or a fork.
Cut the greens finely. Cheese grate on grater.
Remove the dough from the oven. Lay out the filling and add the fill.
Top with cheese and greens.
Bake for 30 minutes in a preheated oven to 230 ° C.
