How to fill the okroshka
Distinguish not only the ingredients of okroshki, but also the drink that it is fueled. In addition to traditional unsweetened kvass, okroshka is made on mineral water, whey, meat broth, kefir, ayrane, tan, yogurt, beer, brine and even plain water. There is no common opinion about the correct refueling, it all depends on your preferences.
In the presented recipes, the filling is perfectly combined with the ingredients, but you can replace it according to your taste. If you do not like the astringency of kvass, take mineral water. If you like dairy products, use them. The tremendous taste of okroshki can hardly be spoiled.
Just do not forget: the milk must necessarily be chilled. So before serving, put it in the refrigerator for at least half an hour.
1. Classical okroshka with sausage
Ingredients
- 4-5 cooked potatoes;
- 5 boiled eggs;
- 8-10 radishes;
- 2-3 fresh cucumbers;
- 300 g of boiled or smoked sausage;
- 1 bunch of dill;
- 1 bunch of green onions;
- salt – to taste;
- sour cream or mayonnaise – to taste;
- kvass – to taste.
Preparation
Cut the potatoes, eggs, radish, cucumber and sausage into cubes. Grind the greens. Mix all the ingredients and salt. Add sour cream or mayonnaise, season with kvass and mix again.
2. Okroshka with beef
Ingredients
- 4 boiled egg yolks;
- 3 tablespoons mustard;
- 400 g of boiled beef;
- 4-5 radishes;
- 2-3 fresh cucumbers;
- 3-4 boiled potatoes;
- 1 bunch of green onions;
- 1 bunch of dill;
- salt – to taste;
- sour cream – to taste;
- kvass – to taste.
Preparation
Mix the yolks and mustard to a uniform consistency. Cut meat, radish and cucumber with straw, and peeled potatoes – cubes. Chop onion and dill.
Mix all the ingredients. Add salt, mustard dressing, sour cream and kvass and mix again.
3. Okroshka with smoked chicken
Ingredients
- 5-6 boiled potatoes;
- 6 boiled eggs;
- 4-5 fresh cucumbers;
- 10-12 radishes;
- 1 bunch of green onions;
- ½ a bunch of dill;
- ½ a bunch of parsley;
- 2 smoked chicken legs;
- salt – to taste;
- a pinch of citric acid;
- sour cream – to taste;
- carbonated mineral water – to taste.
Preparation
Cut the potatoes and eggs, as well as cucumber and radish cubes. Grind the greens. Remove the skin from the thighs and chop the chicken into small pieces.
Mix all the ingredients. Add salt, citric acid and sour cream. Pour in mineral water and mix well.
4. Okroshka with pork and beans
Ingredients
- 250 g of pork;
- 4-5 cooked potatoes;
- 4-5 boiled eggs;
- 250 g of canned green peas;
- 250 g of canned beans;
- 2 fresh cucumbers;
- ½ a bunch of green onions;
- ½ a bunch of dill;
- salt – to taste;
- 2 tablespoons of sour cream;
- 3 tablespoons of mayonnaise;
- 2 tablespoons mustard;
- kvass – to taste.
Preparation
Cut the pork into small pieces, place on a heated pan and fry for about 7 minutes, periodically turning over.
Potatoes and eggs cut into cubes. Add them peas, beans, diced cucumbers, chopped greens and chilled meat.
Add salt, sour cream, mayonnaise and mustard and mix. Pour kvass and mix well again.
5. Okroshka with sausage and beetroot
Ingredients
- 2 boiled beets;
- 4-5 cooked potatoes;
- 2-3 boiled eggs;
- 1-2 fresh cucumbers;
- 150 g of boiled sausage;
- 1 bunch of dill;
- ½ lemon;
- salt – to taste;
- ground black pepper – to taste;
- sour cream – to taste;
- carbonated mineral water – to taste.
Preparation
Rub the beetroot on a grater. Potatoes, eggs, cucumbers and sausage cut into cubes. Chop the dill.
Mix these ingredients. Add the lemon juice, spices, sour cream and mineral water and mix well.
6. Okroshka with smoked fish
Ingredients
- 1 bunch of green onions;
- ½ a bunch of parsley;
- ½ a bunch of cilantro;
- salt – to taste;
- 5-6 radishes;
- 1-2 fresh cucumbers;
- 4 boiled eggs;
- 4-5 cooked potatoes;
- 200 g of smoked pink salmon;
- ½ lemon;
- ground black pepper – to taste;
- a pinch of ground red pepper;
- a pinch of sugar;
- sour cream – to taste;
- kvass – to taste.
Preparation
Finely chop the greens, add salt and lightly crush the crush until juice appears. Add to the greenery diced radishes, cucumbers, eggs, potatoes and pieces of fish. Then add the lemon juice, spices, sour cream and kvass and mix.
7. Okroshka with crab sticks
Ingredients
- 250 g of crab sticks;
- 5-6 radishes;
- 2-3 fresh cucumbers;
- 2-3 boiled eggs;
- 1 tablespoon mustard;
- 3 tablespoons of sour cream;
- 1 bunch of dill;
- salt – to taste;
- ground black pepper – to taste;
- kvass – to taste.
Preparation
Cut the crab sticks, radish, cucumber and egg whites into cubes. Mix yolks, mustard, sour cream, chopped dill and spices to a homogeneous consistency. Add the mustard sauce and kvass to the sliced ingredients and mix.
8. Okroshka with squid and tomatoes
Ingredients
- 1-2 fresh cucumbers;
- 3-4 boiled potatoes;
- 2-3 boiled eggs;
- 5-7 cherry tomatoes;
- ½ a bunch of parsley;
- ½ a bunch of dill;
- 200 g of raw squid;
- ½ lemon;
- salt – to taste;
- ground black pepper – to taste;
- 150 g of natural yogurt;
- still mineral water – to taste.
Preparation
Cut cucumbers, potatoes and eggs into cubes, and tomatoes – quarters. Chop parsley and dill. Dip squid meat into boiling water for about 30 seconds, cool and cut into cubes.
Mix all the ingredients, add the lemon juice, spices, yogurt and mineral water and mix well.
9. Okroshka with Adyghe cheese
Ingredients
- 2-3 boiled potatoes;
- 2 cucumbers;
- 4-5 radishes;
- 200 g of Adyghe cheese;
- ½ a bunch of parsley;
- ½ a bunch of dill;
- salt – to taste;
- ground black pepper – to taste;
- ¼ lemon;
- kefir – to taste.
Preparation
Cut the potatoes, cucumbers, radish and cheese into cubes. Add chopped greens, spices, lemon juice and yogurt and mix well.
10. Okroshka with pickled mushrooms and sauerkraut
Ingredients
- 200 g of salted mushrooms;
- 2-3 boiled potatoes;
- 2-3 boiled eggs;
- 100 grams of sauerkraut;
- 1 bunch of dill;
- 1 bunch of green onions;
- 1 tablespoon mustard;
- 2 tablespoons of sour cream;
- salt – to taste;
- kvass – to taste.
Preparation
Cut mushrooms, potatoes and egg whites into cubes. Add cabbage and chopped greens. Mix egg yolks with mustard and sour cream until smooth. Add to the sliced ingredients mustard sauce, salt and kvass and mix well.
