Preparation

Mix all the ingredients in a saucepan with a thick bottom and put it on a small fire. Stirring constantly, simmer for 7 minutes until it turns yellow. After that, cook the paste for another 2-5 minutes, without stopping stirring. Time depends on the type of plate and the strength of the fire.

To find out if the paste is ready, test. Scoop up a little sugar mixture and spoon it into a glass with cold water. Just a couple of seconds, catch a drop. If it has hardened and you can roll a ball out of it, the paste is ready. If the drop is slippery, inelastic, cook the mixture a little more and repeat the test.

Be very careful not to miss the moment of readiness. Closer to the end of cooking (immediately after the mass turns yellow) test the paste every 10-15 seconds.

Pour the prepared paste into a plastic or glass container with a wide throat. Close the lid tightly and after 5 minutes, refrigerate for a quarter of an hour. During this time, the paste will cool to the desired temperature: 30-40 ° C. The bottom and walls of the tank will become warm.
